I'm a lazy baker, never buy special ingredients I just use whatever is in the cupboard and do my best. In this respect healthy recipes can be a bit of a faff, they require all kinds of crazy (expensive) ingredients and I just can't be asked. So I welcome you to the mover VERSATILE BROWNIE RECIPE EVER. I bake normally once a week and although I want to get back into it after life has got a bit hectic, because of the quantity, (quality can't be accounted for) I need a recipe that I can use whatever is in stock, and it doesn't create much mess. It's pretty much at win, win, win.
Suitable for vegan, gluten free, paelo and whatever other crazy ass diet you are on.
Ingredients:
1 cup butter/margarine/coconut oil2 cups sugar/ sugar substitute, maple syrup etc.
4 eggs/ 1 cup of yoghurt (1/4 for every egg) I used coconut flavoured
2 teaspoons vanilla extract (optional)
2/3 cup cocoa powder
1 cup flour (any kind)
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips/dried fruit/marshmallows (optional)
Method:
Heat oven to 180 degrees c. Line a 9x9 inch panMelt butter in medium saucepan, stir in sugar, remove from heat.
Allow to cool a bit then add egg/yoghurt and vanilla extract.
In separate bowl mix cocoa powder, flour, salt, baking powder and chocolate chips.
Do not overmix (easier if you use a whisk)
Pour batter in pan and bake for 25-30 minutes, might need a bit longer, do not overbake!
Allow to cool and cut into squares, enjoy the amazingness
